The elegant Moroccan menu at the Palais Faraj restaurant includes an especially elaborate array of traditional salads, followed by less common dishes such as chicken stuffed with fruits and couscous. Mediterranean-French and Asian dishes are also an option. On balmy nights, book a table on the terrace, which feels suspended above the medina – you're eye level with the neighbourhood minaret.

The hotel's bar (cocktails Dh150), in another raised wing, is also lovely but can be smoky.
