Slinging fresh fish daily for 700 years and still going strong, the fishmongers here are more vital to Venetian cuisine than any chef. Scour the stalls of glistening fish on hillocks of ice for moscardini (baby octopus) and seppie (squid). Sustainable fishing is not new here: marble plaques show regulations set centuries ago for minimum allowable sizes for fish. Locally caught produce is tagged 'Nostrano'.
