It's plenty refreshing for a new Italian restaurant opening in Vegas to eschew the Neopolitan pizza craze that is sweeping the city. Even better, the 56th floor views from the Palms tower. An understated menu of excellent dishes prepared simply is the cherry (tomato) on top, making Vetri one of the jewels in the Palms' new crown.
