In the equally hi-tech wine bar, rotating shelves ensure glasses remain dust-free and potted herbs get their fair share of sunlight and water. A robotic arm retrieves bottles from the cellar and even pours out the wine.
The bar is named after an explorer the globetrotting owner (an underwater photographer) met at the Santa Lucia lagoon in Cuba after diving with bull sharks
