High on the hill, not far east of Sevenhill in the Polish Hill River sub-region (lime-, slate- and mineral-rich soils), Paulett has the best views in the business. If you can drag your attentions away from the gorgeous vista, you'll find some particularly good dry-grown whites: six varieties of reisling, plus semillion and chardonnay.
