Inside Hilton’s Longkloof Canopy hotel, Ongetem, which translates to “untamed” in Afrikaans, opened in 2025 and toys with traditional Cape Malay flavors and techniques in elevated ways. Colorful and eclectic, the restaurant displays designs from local artisans and maintains its dedicated theme of “Butcher, Baker, Cocktail Maker” throughout the guest dining experience. The menu, built for sharing, includes small and large plates, sides and appetizers primed for prolonged, camaraderie-driven meals. Ongetem specializes in free-range, grass-fed beef from South Africa – a must-try is the steak grilled over open fire.
