Mount your culinary camel and traverse the Silk Road sands to this singular Central Asian food fest. Grilled lamb doused in cumin and chilli, baked flatbreads, hearty stews and noodles are dished up by ethnic-minority Uyghurs from Xinjiang in the far west of China. You can also get Xinjiang tea, dark beer, wine and even homemade yoghurt.
A hard-to-find treat made here are kǎo bāozi (烤包子), baked, lamb-filled pastry pockets known as samsa on the streets of Kashgar. They're sold by the jīn (500g, about 12), but you can get a half order (半份; bàn fèn) on request.
