This institution has been serving up classic Suzhou-style soup noodles for 200 years. The delicious broth, which is made fresh each night from herbs, spices and a variety of animal bones, is the key component – come early, as once the broth runs out the restaurant stops serving. Do as locals do and slurp it out of the side of the bowl.

Try the signature fēngzhèn noodles served in white broth (白汤面底), with a huge hunk of soft, fatty pork belly (白焖肉). Order just inside the entrance, take your number and find a seat.
