Tiled floor to ceiling, this is less a tea shop than a decorative box, a kind of tiny theatre in which the voluble Abdellah, a born showman, mixes teas to order from piles of fresh herbs – not just mint, but also wormwood and other traditional digestives. Abdellah swears his secret is the water: it comes from the holy Kairaouine complex.

To find him, take the street off Place Seffarine opposite Crémerie La Place. Midway down, a few of Abdellah's seats spill out onto the street.
