Se'i Babi Om Ba'i

West Timor


The first place in Timor to serve se'i babi (smoked pork) in a rumah makan, and not just to families on special occasions. If you want to see the process, arrive around 8am. Strips of pork are served with rice and a bitey sambal in a roadside hut with dogs waiting nearby for leftovers.

Between 12 and 30 whole pigs are cooked daily from 5am, with much of it sent to Jakarta and Surabaya.
