If you're looking for a real local experience, book a table at this wood-panelled travellers inn on the road to Tenno. It's been run by the same family for the last 80 years and prepares the typical Trentino dish, carne salata.

Although ostensibly salted beef, the dish requires a laborious preparation: the meat must be tenderised in herb-infused brine in a ceramic dish for several days and is then served with various pickled side dishes. It's been around since the Middle Ages.
