Yiorgos Hatziparaskos

Established in 1948, Yiorgos Hatziparaskos is one of the last traditional filo masters in all of Greece. Assisted by his wife, Katerina, and son, Paraskevas, today he still makes superfine pastry by hand in his workshop. Watch the spectacle and try some of the best baklava and kataïfi (‘angel hair’ pastry) you will ever eat.

The highlight is when they whirl the dough into a giant bubble before stretching it over a huge table.
