This counter-service spot, a mod-looking addition to local bar Maria’s, has created a new culinary genre: KoPo, or Korean-Polish fusion. The owners created the mash-up in homage to their family backgrounds, resulting in some wild combinations. Maria's Standard tops a Polish sausage with 'kraut chi' (sauerkraut meets kimchi), while dill-scented potato pancakes get a twist from tamari-spiked sour cream.
