For years, this Zhengzhou stalwart has been drawing raucous crowds for its nourishing noodles served in deliciously oily mutton broth (烩面, huìmiàn).

Place your order with a green-shirted staff member: basic (优质, yōuzhì) or deluxe (特优, tèyōu), with a bit more meat. Servings can be small (小, xiǎo) or large (大, ).

Help yourself to tea at the tea station.

Add coriander and chilli to taste and slurp your soup straight from the bowl. The pickled garlic is for eating on the side.
