If you have only one dining splurge in Southern Belize, the restaurant at Copal Tree Lodge is the place to do it. The location, high on a jungle hilltop, is superb and the restaurant is a delight with its large deck, expansive views and attentive service. Food is expertly prepared with a farm-to-table philosophy combining uniquely Belizean and international flavors.

Most of the produce and ingredients come from Copal Tree's own farm and gardens or from local farmers and fishers. Light lunch might consist of tacos, salads or lionfish ceviche. Dinner is a daily changing menu that might feature fresh fish, homegrown chicken or vegetarian dishes. Downstairs is the sociable Rum Bar. Reservations recommended, especially for dinner.
