Although food isn't generally considered a highlight of travel in Zambia, you'll eat very well, particularly in the national park lodges, which offer the highest standards of culinary options.

Don't miss the opportunity to sample traditional Zambian food either, including the locals' staple nshima, a thick maize porridge that's bland but filling. It's eaten with your hands and accompanied by beans or vegetables and a hot relish, and sometimes meat or fish.
