This is the cooking course that launched Hoi An cooking courses. Classes are directed by Trinh Diem Vy, owner of several restaurants in town, or by one of her protégés. Classes concentrate on local recipes including cao lau and ‘white rose’ (banh vac; a delicate, subtly flavoured shrimp dumpling topped with crispy onions). Classes can have up to 30 people and some feel the whole experience is a little too organised.
