The king of all locavore restaurants, Sikta & Spruce was the pilot project of celebrated Seattle chef Matt Dillon. It's since become something of an institution and a trend-setter with its small country-kitchen decor and constantly changing menu concocted with ingredients from Dillon's own Vashon island farm. Sample items include the housemade charcuterie, conica morels or roasted asparagus and liver parfait.
Vegetarians will have a field day.
The restaurant is located in Capitol Hill's gorgeous Melrose Market, an oasis of sustainability.
