One of Seattle’s better Mexican places, the Oaxaca mixes old hometown favorites with dishes that don’t often make it north of the Rio Grande. Anyone who has been to Guadalajara will know that the birria has nothing to do with beer and plenty to do with slow-cooked lamb accompanied by roll-your-own tortillas. Order it and get your fingers dirty.

The other standout dish is the mole negro Oaxaqueño, with its rich mole sauce, the measuring stick of any good Oaxacan restaurant.
