Possibly Seattle's most ethical restaurant, Chaco Canyon (there are now three outposts) serves vegan food from a revolving cache of partner farms (all in Washington state). It's also big on raw food. If you’re a first-timer try the grilled pineapple lentil burger. For those going raw, there's a raw enchilada plate with mango, cashew and avocado adding to the taste.
Other highlights are the Thai peanut bowl and the Elvis smoothie (banana and peanut butter). Chaco is serious about recycling and composting too, and would rather lend you a real fork than hand you a plastic one.
