Chef Tim Archuleta slices silky, sustainably sourced fish with a jeweler's precision, balances it atop well-packed rice, and tops it with tiny but powerfully tangy dabs of gelled yuzu and microscopically cut spring onion and chili daikon that make soy sauce unthinkable.
