The phrase ‘everything but the squeal’ springs to mind when perusing the menu at Cochon, regularly named one of New Orleans’ best restaurants. At this bustling eatery Donald Link pays homage to his Cajun culinary roots, and the menu revels in most parts of the pig, including pork cheeks with creole cream cheese and fried boudin. Other meats include rabbit, alligator and oysters.

The food could be overly rich but ends up being hearty and smoky without inducing a food coma.
