Eat creations by molecular gastronomist Grant Achatz, the chef of three-Michelin-star Alinea, on the (relative) cheap at Roister. The restaurant cooks wild riffs on comfort foods while a rip-roaring soundtrack blasts. Dishes change and defy easy description – like the 'whole chicken' served with thighs fried, breast roasted and the rest melded into a chicken salad – but they're all rich and playful.
