Bad Hunter
American in West Loop & Near West Side

Bad Hunter describes itself as 'vegetable-focused,' so vegetarians will find plenty to sink their teeth into, such as buttery squash dumplings with candied hazelnuts and eggplant-and-fig pasta (though the menu changes seasonally). The flavors are bright and unique, and it's pretty upscale for vegetarian food in Chicago.
Note the menu isn't exclusively meat free: a handful of fish, chicken and beef dishes also emerge from the kitchen.
