South Ukraine boasts one of the most fertile soils on Earth, which translates into an abundance of fruit and vegetables in the local diet. Vegetable, especially aubergine, stews are a major local staple, along with mamalyga, a local version of polenta, and brynza goat cheese. No meal is complete without a sugary watermelon, such as those sold on every corner in summer. All of these delights are available at farmers markets as well as in Odesa's classiest restaurants.
