Grabbing a dürüm (grilled meat in a lavash flatbread wrap) on the go in Istanbul is a quick way to refuel, but at Basta, it’s so much more. Young chefs Kaan Sakarya and Derin Arıbaş bring fine-dining training to this humble street food, crafting combinations such as slow-cooked lamb belly with harissa and grilled onions, or lamb sausage with hummus.
