A wide assortment of eateries lie along Saraçlar and Maarif Caddesis. Most of the riverside restaurants south of the centre are open only in summer and are often booked solid at weekends.

Edirne Specialities

The city centre is full of ciğercisi (liver restaurants) serving the city's signature dish, tava ciğer (thinly sliced calf's liver deep-fried and eaten with crispy fried red chillies), usually enjoyed with a chaser of ayran (yoghurt drink). Other local specialities include badem ezmesi (marzipan) and gaziler helva (veteran's helva), a rich concoction of butter, flour, milk, sugar and almonds.
