If you want to explore singletrack by yourself, there is not shortage of it in Tibet/Kyrgistan, but you would need to get a good trekking guidebook/map to identify suitable trails. The one area that i know has very intriguing trails is between Everest Base Camp and Tingri - there are various trekking trails between the two that are suitable for mountain biking (but not if you are carrying significant amount of kit with you).

Check out Out There Biking, they are looking to do mountain biking tours of Kyrgistan in the next year or two.

Be careful if you want to attempt remote trails on your own - its very isolated out there and conditions are severe (very cold at night). My first attempt to explore a trail from Tingri ended when i went over on my ankle when trying to ford a river. As i was lying there waiting for the agony to subside I had visions of myself hobbling back to safety like the guy in the book/movie 'Touching the Void' if it turned out (as i'd feared) that I'd broken my ankle. Thankfully, i had only twisted it badly, so i was able to (carefully) cycle back to Tingri.
