One week near Alicante / Gandia

After a few days in Alicante and the same in Valencia we have one week to explore with a hire car. Please can anyone recommend places to visit south of Valencia and north of Alicante (or inland) or places to stay. We are mostly interested in wildlife, local history, lovely scenery, walking and local food. Many thanks in anticipation of some replies to inspire us on our trip.
