Itinerary advice and off the beaten track places?

Hello dear people:). Since I have booked the flights to sri lanka I heared more and more about totally overcrowded trains and places (like Yala, Cultural Places in the Triangle, and Mirissa by now?)... So I am overthinking my travel Plan and hoping you guys have alternatives:).
We like some nice infrastructure but not 100 huge Hotels at a beach, 20 boats around one whale or 80 yeeps around one Elefants. And it sound like that is the case now.
We have 21 days in march and where planning to do the beaches first and then head up north. Arriving in the morning would be

-3 nights in the backcountry jungle 15 minutes innland from hikkaduwa/ arriving/visiting (what?) beach and Galle day trip (Alternative Bases not too far from the airport and close enugh to Galle? Not Unuwatuna- sounds to develloped)
-3 nights mirissa (Alternatives?)
-1 night Tangalle (reccomondations where?) followed by
-1 night unuwatuna with morning safari
-5 to 7 nights in the Hillcountry... Ella, Haputale, Nuwara Eliya-- how to split it? Alternatives?
-1 Kandy (if at all?)
- 3-4 in the cultural triangel, not planning to do Anap. Where should we base ourselfs?
- maybe 2-3 nights tricomalee/anywhere close at the east coast if not to far from e.g. dambulla and worth it (at the end of march) and if there is any good not to expensive, not too long way to get back to colombo. Also staying there would mean cutting nights off Hill country and mayby south beaches.
-1 night negombo before heading home in the morning.

Any comments and thoughts are higly appreciatet, also less known alternativs that most people haven't put on their list yet.
