My boyf has asked for either a Thai Cookery Course or a Butchery course (e.g. so he can bone and fillet fish and meat at home) for his Christmas present. Anyone able to recommend a good school/provider? Just a one day thing would do, somewhere in the South of England preferably. He's a good cook, just wants to try something new. I've done a search but a lot of these 'gift day' sites seem a bit gimmicky and not sure he'd enjoy that so much!

As to thai cookery, I know of a shopowner lady in Exeter who also offers asian cooking courses. (or used to last time I spoke to her)
