Choosing the right hotel(s)

My girlfriend and I will be traveling in Myanmar for the month of March. We are seasoned travelers who have chosen Myanmar because we want to see as much of the country as possible before the "changes" come. I first visited Northern Thailand in 1980 and it is almost unrecognizable to me now. We can easily afford to stay at the most upscale hotels in Myanmar but I have a sense that we might be isolating ourselves from the very things we are coming to see. We like charming and clean. Good food, congenial fellow guests and convenience rate equally high. Our travels will take us to:

Mruak U (5 nights)
Bagan (3)
Mandalay (3)
Inle (4)
