From Gimmelwald or Lauterbrunnen or even Interlaken there's plenty of hiking opportunity, train and bus connections, though it can be a little bit touristy ;-)
Scotland for sure can please you. If you have time, go to the Outer Hebrides, you won't regret one second of it, and most of the time see nobody!

I noticed you mentioned Gimmelwald....
I've been skiing in Grindelwald (Switzerland) and it's one of the best places to ski (although unfortunately it was a bit rainy that season for me). It also looked pretty good for hiking, etc. But that was in 2000 when i was...10? 9? something like that.
