Doing a quick search and looking over some articles and blogs that use the term, I gather that "variable d'ajustement" means a factor, such as employment or the exchange rate, that can be altered in order to hasten the end of the current economc crisis. In that case, one might use the term "expendable" in English.

could you please make me a full sentence with it in an economical context in order to be sure. is it possible to write : the state you vat as an expendable variable? it looks funny to me. VAT = taxes on products.

Using your first example, one could say:

The welfare of the family has become expendable in the search for a way out of the economic crisis.

I would only use "expendable" in an emotional or polemic context, as above. In a neutral situation I would use a phrase like "be allowed to adjust", e.g.

The exchange should be allowed to adjust in order to hasten the end of the crisis.

I looked up "variable cachee" but the references were to quantum physics, which I don't understand in any language!

I would just call it a variable in English.
