For your preferences street food, culture, architecture, markets, museum...I think all destinations you listed are right places.
From Hochiminh, you do a private tour to Mekong delta, comfortable, time saving, stay 1 night there. I'd like to suggest Mekong Lodge.

I did the Bangkok to Had Yai, mini-bus to Pak barra route. Easy peasy, no problems, took a taxi from the airport to Had Yai and booked the mini-bus / ferry combo there.

If you go Hoi An/Da Nang by road make sure you go over the beautiful Hai Van pass and not go the shoerter route through the tunnel.

You'll be tired after a long flight from Europe. So I'd consider spending a couple of days in Bangkok unless you really hate cities. The Khao San Road area in Bangkok is a nice introduction to Thailand. It is very cheap and at night there are more than a hundred street vendors selling street food. If you stay in a hostel near Khao San Road, you'll meet other travellers who are heading north. Also, Chiang Mai is on the way to Chiang Rai about 4 hours sooner. It is nice. And the train goes…
