We (two of us) will be on Ko Samui and we would like to fly from Surat Thani or Ko Samui to Chiang Mai. We would like some flexibility in traveling and right now we are not sure of the exact date we would like to leave but it would probably be around June 27th. Is it possible to wait to a week before we decide to leave to book the reservations or should I go ahead and book now so we can ensure we have a flight. I have no idea how busy the airlines are.

I'm planning to be in Thailand for 12 days and was considering shooting down to Ko Samui for a couple days but I see weather may not be the best this time of year. Wondering if it would be better to spend more time in Chiang Mai or take a couple day trips from Bangkok or chance it in Ko Samui.

Some are family run , some have food . Not so many dorms and hostels are not everywhere. The 150 baht dorm at Cave Lodge is in bamboo thatch long house style room. Tonsai beach would be the most low key beach at Krabi.
So instead of going back to Chiang Mai, continue further south to Mae Sariang, and then Tak province and then Kanchanaburi province, all the while bypassing the busy highway between Bangkok and Chiang Mai.

You don't need to just stay in hostels , there are plenty of guesthouses in Chiang Mai . Perhaps try Tapeh Gate area. Ko Phi Phi is somewhat expensive and some may feel its over developed.
So in terms of accommodation I mostly looked at dorms in hostels, so far.
These would be 3-5 Euros from what I've found.
Eating street food or self cook is also no problem I think. For that I calculated between 3 to 10 Euros per day.
Hostels not everywhere , on the islands its mainly bungalows that are the main budget accomm. In Bangkok and Chiang Mai many guesthouse which can be as cheap as hostels.
