My faves from North Laos: Muang Sing, Nong Khiaw, Muang Ngoi Nua, Muang Khua, Nam Nga, Vieng Phou Kha, Sam Neua, Phonsavan and of course the obvious, Luang Prabang.
In Chiang Mai there has never been a requirement for medical or police checks and have never known anyone from elsewhere who has required either.
Take the advice of Hull consulate then seek the advise of a visa agent at the location of your choice In country as to actual requirements. If you use their services it will cost you around 5,500baht and may be money well spent for initial retirement extension but subsequent extensions be brave and go it alone as it's not difficult providing funds are in place.
I know it depends on personal taste, but some people suggest too rushed itineraries.
In my opinion, because you will travel in February, Sapa is not a good choice, foggy and sudden rain, no rice filed as well. This is my suggestion:
Hanoi 2 nights: the first day to relax and stroll around Old Quarter, many see water puppet show (I enjoyed the show too but it's a little bit long), you can consider other shows like AO show or My village (quite pricey but breathtaking). The next day visit Temple of Literature, Vietnam Museum of Ethnology, Tran Quoc Pagoda.
Halong Bay 2 nights (1 night on board, 1 night in Cat Ba island), both Lan Ha & Bai Tu Long are beautiful but I choose Lan Ha over Bai Tu Long
Ninh Binh deserves 1 night: Trang An or Tam Coc, Bai Dinh, Hoa Lu, biking... it's a lovely town. From Ninh Binh, you can transfer to Mai Chau or Pu Luong for 1 or 2 nights at stilt house of the Thais (I prefer Pu Luong as Mai Chau is more touristy).
Back to Hanoi for a flight to Danang, 30-minute drive to Hoi An, spend 3 nights here: old town, traditional villages, beach and cooking class.
HCMC 2 nights and Mekong delta 2 nights.
2.5 weeks is not a lot,but you can fit in a 3 stop trip......Bangkok,Siem Reap and a Thai island...flying between them.If you really want to squeeze down your time in each,you could even fit in Chiang Mai (personally I wouldn't,but its possible).There are plenty of cheap flights.
Its a good idea not to try and fit in Laos and Vietnam too..you really haven't got the time ;-)

I've been trying to find out information about the availability of rabies vaccines in Laos- I've done some research but a lot of the info I've come across is a few years old...
I'm currently on the rabies post-exposure vaccine cycle after getting bitten in Bangkok, and only have my final shot remaining, during which I will be in Laos. Before I confirm my travel plans, I need to check that I will be able to get the vaccine when needed.
I was initially planning on being in Luang Prabang on the day I need the shot, however I have heard conflicting information about if and where the vaccine is available in LP. I've been told that the vaccine is definitely widely available in Vientiane, and that I might be better off there.
I guess my question is, does anyone know if the rabies vaccine likely to be available in Luang Prabang (and if so where), or am I better off extending my time in Vientiane to a week and cutting my time in Vang Vieng and Luang Prabang to ensure I can get the shot?
Any help or advice much appreciated!

I am going to Laos soon for about a week and I trying to decide where my final destination should be before leaving.
We are planning to go to Luang Prabang for about 4 days 3 nights but I am trying to decide where we should go for the last few day.
I was thinking of flying to Pakse to see the UNESCO site Wat Phu would this be a good idea? Is it better than spending those last 2 or 3 days in Vientiane. I have heard that the capital isn't all that worth it but I have also heard that Wat Phu isn't all that great compared to Angkor Wat.
What do you think? Or is there anywhere even cooler to see?

Do you mean four whole days? If so, then yes. You can buy a three day ticket but you do not have to go for three successive days. You can take a day off if you feel 'templed out'.
Between Chiang Mai and Bangkok you could go to either Ayutthaya or Sukothai for the historical parks. As for beaches, pass. I don't do them.
