I did some great meandering from PM to Valdivia a few years ago. Some of it was on dirt roads. Beautiful fishing villages along the coast and impressive lakes and volcanoes inland. From VD I bussed it north to Santiago due to a time constraint so can't comment on that part but I bet you could find some nice country there too since you have the time.
