I travel to Dubai all the time (am there now) and no one looks at your other stamps - at all. And yes, Dubai has specifically said that Israeli stamps are fine. I can no longer find it; but several years ago the New York Times did an article on Dubai and someone sent a letter about the stamp. They checked with Dubai and got the formal answer of no problem whatsoever with the Israeli stamp. But, also, in the minute or so (or less) that they spend with UK/US/Australian etc passports; they don't look at anything but your picture and check their computer for other entries and exits to the country. They just don't worry about where else you have been.

British, German and Swiss passports primarily. And this is all recent travel spanning the last 5 years until now.
I have personally been in and out of the ME on many occasions, Qatar, UAE, Oman did't even look for stamps or mention Israel, the only countries that checked stamps (but didn't ask questions) were Kuwait and Lebanon.
It doesn't seem like the actual answers from real travellers hold much sway if you prefer to believe hearsay or rumour rather than experience.
