I am traveling to Jordan for the first time in September. I am looking for some things to do or sights to check out that aren't on the tourist trail. I heard something about camel racing in the desert. Anyone know anything about that?

These races are organized for the tourists. Plenty of opportunities to photograph.

The schedule of the bigger races is not known and seems to depend on the mood of the organizers.

Off the tourist trail, but nonetheless of interest to tourists:
1) Qasr Bshir
2) The "secret" tunnel under Shobak castle
3) The drive from Little Petra to Wadi Araba
4) Some lesser-known hikes in Petra (e.g. the "walk above the Treasury")
5) Himmeh and the Yarmouk Gorge drive

1 to 3 have been discussed on the TT a few years ago. For 1, 3 and 5 you need a car (for 1 a 4WD). 3, 4 and 5 are featured in guidebooks, but are not visited by many tourists.

If you wanted to visit a place that no tourist ever goes to you could travel to the big towns (almost suburbs) north of Amman like Zarqa, but there is nothing of interest to see there. Or go to Al-Wehdat refugee "camp" (really just a normal, poor, urban neighbourhood) in the middle of Amman.

Thanks for the link. Unfortunately, I will not be there during any of those races on the site you sent to me. The days I would be available to go to one are Sept 22 and 23. Do you know where these races take place? I will be staying in Amman at that time and I'm looking for some unique things to see/do.

Races are in Diseh, close to Rum. Sorry it does not match your schedule.
