Have you looked at a map? The only way (theoretically) to get from Turkey to Israel by land is via Syria. And in case you haven't noticed, Syria is in the middle of a horrific civil war and nobody in their right mind would be going to Syria now. But - theoretically - the route would have to be Turkey - Syria - Jordan - Israel. The border between Lebanon and Israel is closed, and you cannot cross it.
Jordan to Israel is no problem, but Jordan doesn't have a border with Turkey. If you are mad enough to go to Syria (and if you can get a visa), you would have to go from there through Jordan because you cannot cross from Syria to Israel.
