Is it possible (by bus) to visit Bethleem and Hebron as a day trip from Jerusalem on Shabbat ?

Of course. The buses to Bethlehem and Hebron are Arab buses and leave from the Damascus Gate. Shabbat doesn't affect non-Jewish areas at all.

I was just reading my LP Guide Book and it looks like the Ibrahimi Mosque is closed on saturdays.

Could someone confirm this information ?

Is it still worth visiting Hebron if the Ibrahimi Mosque is closed ?

Yes, still worth going to Hebron even if the mosque is closed. I was there last Friday, when it was closed (being a Friday during Ramadan), so I walked through the markets and then in the settler area. An absolute eye-opener and one of the most compelling and memorable parts of my trip. You can see mosques in other places, but the virtual war zone in and around the settler area is probably quite unlike anything you have seen before. Make sure you duck into any buildings open to the public in the settler area - I went into one and saw some murals that were pretty explicit on the settlers' opinion on their claim to all of the West Bank and their opinion of the UN. Be prepared to be watched like a hawk by the soldiers. I was also asked my religion before going into the settler area: the right answer is "Christian."

I confirm that it's very easy to do both Bethleem and Hebron as a day trip from Jerusalem on Shabbat.
