I got my visa code.. i want to travel months from now. Possible?

Hi I received my visa code for pickup in Istanbul. I am an American.

Im currently in Central Asia trying to finish off the Stans but I know that i must submit my passport within one month. I plan on going to Istanbul in 3 weeks time.

I would like to travel to Iran September 7-21. When i submitted my itinerary to the travel agency in Tehran, I wrote September 1- September 14. Can i put a different date on the paperwork I file at the embassy when i submit the visa code?
