Is it possible to book a one-way cruise from either San Francisco or LA to Mexico in May? I've looked on a few website and they all seem to be round-trip cruises.

Usually it's possible. But you will have to pay the full price (you will not get the "usual" discount of 25 to 60 per cent that you get when booking with an agency like www.vacationstogo.com).
