Hi all,

I have been using a Roghan Josh recipe by Charmaine Solomon for a number of years and I really like it - however, I thought I would try a new or a different variation....Can anyone share with me one that they really like.

Vegetarian Roghan Josh:

equal quantities of freshly crushed cumin, coriander and cardamon seeds (perhaps about 3/4 of a tablespoon each)
extra fresh coriander
garlic
onion
freshly chopped chilli (a mixture of red and green is nice)

potato, carrot, almost any other vegetable you can find
tofu (okay, I didn't say it was authentic!)

tinned or fresh (peeled) tomatoes

fry the seeds and onion in some oil, add the tofu, garlic, potatoes, carrots and any other root vegetables
add the tomatoes and some water and simmer until the potato is nearly cooked
add the chilli and any green/fast cooking vegetables you're using and simmer until all the vegetables are cooked

add salt and fresh coriander, serve with basmati or wild rice, yoghurt and hot lime pickle

You could marinate the tofu first for a stronger flavour, but I've never bothered. It soaks it up while it simmers.

This is probably my favorite curry and I've made it lots of different ways. This is probably the healthiest and easiest version! I've also simmered eggs in the pot instead of tofu (until they're semi-soft, not runny), which is interesting.

Definitely a step away from an authentic recipe, but very tasty.
