My favorite street food thus far in Laos is sticky rice with coconut steamed in bamboo tubes...

The small deep fried locusts, which taste not unlike peanuts (to stay on topic) come in at a very close second.

The larger ones aren't as pleasant to eat.

Right now roasting some fresh raw cashew nuts in the microwave oven and should be deliciously done in 4 minutes.Yum.
Lot of fresh young as well as mature coconuts on the trees rotting away and going to waste in our garden as the palms are too tall to harvest and too difficult to dehusk.Its cheap and plentiful around here to just buy them freshly grated or as fresh coconut milk/cream.Can't even give them away.
