Since my family doesn't like fish (poo) and scoffs at vegetarian, I've been serving more chicken. Whenever I google chicken recipes I'm not all that impressed. So I was wondering if anyone had any interesting chicken recipes. The ways I've made it are:

Cossack
Cordon Bleu
Fajita
Quesidilla
Parmesan
Moroccan Lemon (cooked in crock pot)
Grilled kebab with Italian seasoning marinade
Satay

I also make a grilled ginger chicken but I use a premade marinade to which I add ginger and would love a marinade recipe. I also use premade spices for the fajita so if anyone has a good fajita marinade recipe I'd appreciate it.

Well don't google them! There are a lot of food-specific sites, sashac.

Even our very own LPGS is one of zillions (even if LPGS is one of the three food sites on which I post).

If he had his way, Mr. Nutrax would eat chicken every day of the week. I have done chicken six ways from Sunday.

I'd suggest getting your hands on The Best Chicken Recipes from Cook's Illustrated. See if Amazon or some oth rplace will give you a better price. Or, better still, patronize a real brick & mortar book store.

I was very happy with this Greek chicken with yogurt-cucumber sauce - easy to make and the cinnamon on the chicken smells wonderful as it cooks and doesn't overpower the dish.

I got the same error message, but I tracked it down. See if this works. It's basically breaded chicken with a tzatziki/cacik sauce.

One of the easiest things to do is my version of a casserole:

Brown chook, take out of pan
Add chopped onions and garlic, swish around till translucent
Add a spoon of flour, cook till the flour smell goes
Add a bottle of white wine
Add salt & pepper
Add a handful of tarrogon (or lemon thyme or sage or rosemary - you choose)
Cook until chook falling apart. I use boneless thighs.

Or and favourite is:

Chick breast sliced in the paillard style
Pan fry in quite a bit of oil and butter (as this forms part of the sauce)
Once cooked, remove chook from pan and quickly add chopped parsley, juice from 1 or 2 lemons and about a quarter cup of capers. Reduce a little until it's syrupy, then pour over the chicken. Serve with boiled potatoes and steamed beans or asparagus.

I guarantee that both of these will become regulars in your repertoire.

Try "Hainanese Chicken Rice"(basically poached chicken with rice) which is almost a national dish in Singapore and some major towns/cities in Malaysia and parts of Thailand as well as Jakata,Indonesia.
Alternatively,'Thai green curry chicken' is yummy if you like something spicy and aromatic.
