It was brought to America by Scottish immigrants who had roast beef just before they departed, and then used the leftovers to make hash once they arrived.

Superior?

I rather think thats a) a matter of opinion and b) a matter or intention: if you are eating it as a meal in itself, then perhaps your leftover stew will do, but with two runny fried eggs, I think the dryness of a hash is better for soaking up yolks.
