Its a popular dish here in Leon,Nicaragua.Pretty good too.
They sell the iguanas at the market....quite big ones,live and tied up so they can't bite you ;-)

My Honduran neighbours in Belize made it all the time. Sometimes, the iguana would have eggs inside, and they would eat them raw.

Have tried local deep fried monitor lizzards that have been marinated with spicy hot curry spices.
Tastes like a cross between very chewy chicken/fish with lots of small bones.
Imported South American iguanas are sold as pets in pet shops for USD100/150(or more) each and too costly for local consumption.

Would it matter to you what kind of iguana went into the soup i.e. the endangered Nicaraguan green iguana ( popular during Easter celabrations) for instance or do you not care if any of these creatures become extinct.
