... and I want to make a killer pecan pie with some of them. I'm looking for your recipes for the greatest, most knee-buckling pecan pie you've ever had. Please be sure to explain why you believe your entry is the best.

College housemate Kim gave me this recipe years ago. It's the best because it is simple and has the right mix of rich filling with a hint of salt and just-pecans.

Kim's Pecan Pie

Preheat oven to 375 degrees F.
Bake 40 to 50 minutes, until filing is set.

3 eggs
2/3 cup granulated sugar
½ teaspoon salt
1/3 cup butter or margarine, melted
1 cup light or dark corn syrup (Karo)
1 cup pecan halves or pieces ( a 3 ounce package of halves)
9-inch ready to bake frozen pie shell or pastry for one-crust pie

Beat eggs, sugar, salt, melted butter and syrup with a rotary beater. Stir in nuts. Pour into frozen pie shell.

Bake at 375 degrees F. 40-50 minutes, until filling is set.

This one is great because it has chocolate -- need I say more?

Famous Louisville KY Pie (Derby Pie)

Preheat oven to 350 degrees F.
Bake 45 - 50 minutes, until filling is puffed and firm.

1 cup granulated sugar
1/2 cup flour
1/4 teaspoon salt

2 eggs lightly beaten
1/2 cup butter (one stick), melted
2 Tablespoons bourbon whiskey
1 teaspoon vanilla
1 cup semi-sweet chocolate chips
1 cup chopped walnuts or pecans

9-inch pie shell or pastry for one-crust pie, partly cooked.

whipped cream (for serving)

Follow pie shell / pastry directions to partially cook shell.

Mix all dry ingredients (sugar, flour, salt). Add remaining ingredients (eggs, melted butter, bourbon, vanilla, chocolate chips, pecans). Stir well.

Pour into partially-cooked pie shell.

Bake at 350 degrees F. 45-50 minutes, until filling is puffed and firm.

serve with whipped cream
